Classic Quinoa Salad

Having a classic quinoa salad like this ready in the fridge for weekly lunches or dinners makes eating healthy so much easier as it will take you no time to serve it up. The creamy tahini dressing adds such a great flavour and has a great kick from the cayenne pepper too. Top it off with avocado, hummus or extra protein if you like and you have a healthy meal ready in just minutes. This salad keeps well in the fridge for a few days, so the little time investment that goes to chopping up the vegetables and cooking the quinoa will pay off for days and help set you up for success. Planning ahead dis key and is in my experience definitely one of the key things that help people stay on track and reach their goals.

You can easily vary the vegetables and omit or include any other vegetables to best suit your personal tastes. Enjoy!



  • 1 bunch spring onion, chopped
  • 1 red bell pepper, chopped
  • 100 gm black olives, halved/sliced
  • 1 cup quinoa (cooked)
  • 1/2 cup corn
  • small handful sundried tomatoes, chopped
  • 2 large handful rocket/kale, roughly chopped
  • Handful cherry tomatoes
  • 1 bunch fresh basil, chopped
  • 1 bunch fresh coriander, chopped

Tahini Dressing

  • 3 tbsp tahini
  • 6 tbsp water
  • Juice from 1-2 lemon (about 6 tbsp)
  • 2 tsp tamari sauce
  • Pinch cayenne pepper (optional)
  • 1 tsp whole grain mustard
  • 3 tbsp nutritional yeast 
  • 1 tsp garlic powder
  • 1 tsp turmeric


  1. Chop all the vegetables and combine in a large bowl
  2. Mix all the dressing ingredients together in a bowl with a lid and shake vigorously until smooth. Alternatively you can blend together in a blender
  3. Serve quinoa salad on a bed of baby gem lettuce and drizzle a little tahini dressing on top.
