Peanut Butter Chocolate Bites

These peanut butter chocolate bites are a total crowd pleaser and the perfect way to handle your chocolate fix in a healthy way! Made from all natural ingredients, these are refined sugar free, gluten free and dairy free – but so decadent.

Although they are very simple to make, they do require you have a food processor. They are made from a handful of really simple ingredients, and are best kept and eaten straight out of the freezer when they are delicious a cool.



Ingredients

Crust

  • 5 soft pitted dates (medjool dates are best)
  • 2 tbsp nut butter (almond, cashew or hazelnut butter)
  • ¼ cup raw nut (almonds and cashews both work)
  • ¼ cup almond flour
  • pinch sea salt
  • 1 tbsp honey (use maple syrup if vegan)

Chocolate Layer

  • 3 tbsp peanut butter
  • 6 soft pitted dates (medjool are best)
  • 3 tbsp coconut oil
  • 2 tbsp raw cacao powder (or cocoa powder)
  • ¼ cup almond flour
  • pinch sea salt

Instructions

  1. place all the ingredients for the crust in a food processor and process until a sticky crumbly mixture forms. (If it is not sticky enough add a little extra honey or a ½ tsp of coconut oil)
  2. Transfer the mixture to a baking sheet and form a round ball using your hands. Flatten the mixture and place in a a tupperware or baking tray and flatten to smooth using your hands. Set aside.
  3. Next, place all the ingredients for the chocolate layer in a food processor and process until completely smooth.
  4. Add salt to taste. If the mixture isn’tt quite smooth enough, you can add another ½-1 tsp of coconut oil.
  5. Pour the chocolate mixture over the crust and smooth out with the back of a spoon until all the crust is covered.
  6. Place the tray in the freezer and leave for at least 30 mins before cutting into little square bites.
  7. Store and eat them straight from the freezer.
